I was able to deploy cal.com about 4-5 weeks ago just fine, but all of a sudden this started happening and I'm not expert but I feel like this is something I can't get around...

The image calcom/cal.com:latest could not be found for the architecture amd64 and OS linux.

I am haivng the same issue. Is this a railway issue or does cal.com need to supply a new image on their docker registry?

Apologies for the delayed response here. Recently, when we moved the Docker image into the main https://github.com/calcom/cal.com repository and out of the community-owned https://github.com/calcom/docker repository, there was also a change introduced to add ARM64 support. When this support was added, it unintentionally made the latest image ARM64 instead of AMD64. This has since been resolved.
