Your Postgres service is still running and has not been deleted. Deletions made on the project canvas are staged and only take effect when you click the "Deploy" button on the changes bar at the top of the canvas. If the deletion is still pending, click Deploy to apply it, or use the three-dot menu on that same bar to choose "Discard Changes" if you want to keep the database.
