Disable autodeploys

I have a game server that cannot be shut down because it would lose the existing player connections and state. Can I disable GitHub autodeploys for it so that the only way to deploy is manually?

Yes, you can disable GitHub autodeploys. See Controlling GitHub Autodeploys in the Docs.
