Title pretty much explains whats going on, I'll just use "mydomain.com" as my example. I had a previous project that was using www.mydomain.com up until yesterday afternoon to which i deleted it, I then tried to set www.mydomain.com to my new project but it keeps saying unavailable, its been ~16 hours since I deleted the project as well. I'm able to set the domain to mydomain.com (without www sub) which is alright for the time being. Could someone provide some clarity on why i cannot use the www. subdomain and how long this will take until I can?

It could be that your previous deleted project is still using that domain. Railway holds projects for 48 hours after deletion before actually deleting them just in case. You could try going to your deleted project and then removing the domain there before adding it to your new project. You can find your deleted project by going to the Deleted tab in the dashboard or finding the email Railway sent you regarding your project's deletion.
