To prevent future issues, should be deploy our EU server apps using the Runtime V2 or new edge proxy?

That alone wouldn't necessarily prevent any and all issues but it is recommended to switch to the edge proxy and V2 runtime before long because the legacy runtime and legacy proxy will be deprecated.
