I am new to the platform and I am on the hobby plan, I want to know how to stop and start my app and how to use a business domain (mydomain.com) with the instance

You can use a custom domain by going to your service settings and then scrolling down to the network tab. You'll see an option to add a custom domain there, you can then just follow the instructions.
