We're on the Hobby plan. Your logs guide says Hobby keeps logs 7 days, and that "upgrading plans will immediately restore logs that were previously outside of the retention period". For a Hobby workspace: are service logs older than 7 days still stored, and for how long? When are they permanently deleted? Can we have them deleted at 7 days? We need this for our GDPR record of processing.

Yes. On Hobby, the 7 days is how far back the dashboard lets you query. The logs themselves stay stored for up to 90 days, which is why upgrading can bring older logs back into view. That covers build, deploy, application/runtime (stdout/stderr), HTTP, DNS and network logs.
Logs are deleted automatically once they pass 90 days, and after that no upgrade or request can recover them. For your record of processing, list 7 days as the Hobby visibility window and 90 days as the storage period.
We can't delete logs early or shorten retention to 7 days. Logs also can't be deleted or redacted individually or in batches. They expire only through the automatic 90-day process.
