I'm having a lot of latency between internal services:

The redis and postgres have random amounts of latency. Some queries will run in sub 10ms, but some take nearly 1s. On different requests, the same query will be randomly much faster. The database has almost no data in it.

Yep, this issue is limited to Metal for now, we have an engineer staffed to solve this issue.
