All my services are showing no variables. The ai chat tells me variables are still present.. What's going on???

Your service is running and processing data normally, which confirms your variables are present at runtime. This appears to be a UI display issue. Could you try a hard refresh (Ctrl+Shift+R or Cmd+Shift+R) and, if that doesn't help, try in an incognito/private browser window? Let us know if the variables still don't appear after that.
I'm personally seeing your variables in the UI just fine, so I'm thinking something client side on your end?
