my old repos are showing when i try to launch a new server via github however when i try and add new repos (and I have confirmed that I have given railway access to them) They wont pop up at all so I cannot launch anything new!

Can you try disconnecting Github from the Railway side at https://railway.com/account and re-adding it? We've had some rate-limit issues from Github so have been using more caching, which probably explains the behavior you are seeing. We have a project to fix the underlying issue, but in the meantime, the disconnection and reconnection from the Railway side should solve it.
Let me know if that doesn't work.
