Btw it was a prod instance, so not fun just wanted to know if it is something caused by us or you guys

Apparently that Redis instance only had a maximum memory limit of 500 MB. That was causing the instance to crash.
It appears that your method to move over the instance to another one fixed the issue.
I have no idea why it would have that limit but I can take it back to the team.
