I tried out Railpack but got runtime errors. I tried rolling back to Nixpacks but my app doesn't seem to be served and i'm getting weird Caddy-looking logs unrelated to my Node app.

I'm going to say that, in my case, this has been resolved by fixing the initial error and re-enabling Railpack.
However, it does seem like going Nixpacks -> Railpack is a one-way door at this time, as returning to Nixpacks doesn't seem to be viable.

Everytime I switch the builder back to Nixpacks I'm getting logs from Caddy (underlying Railway infra?) that don't belong to my app, and my app isn't served
