Both my custom domains (kanzlei-kainz.at and www.kanzlei-kainz.at) show "Waiting for DNS Update" even though A records and _railway-verify TXT records are correctly set and resolving. I am waiting already for hours that the SSL certificate is provisioned

Your TXT verification records are correctly set, but both domains currently have A records pointing to 66.33.22.1 instead of the required CNAME records. kanzlei-kainz.at needs a CNAME (or ALIAS/flattened CNAME for the apex) pointing to 4oglz3cf.up.railway.app, and www.kanzlei-kainz.at needs a CNAME pointing to ok2d3le8.up.railway.app. Your DNS provider (domaintechnik.at) must support CNAME flattening or ALIAS records for the root domain; if it doesn't, you can switch your nameservers to a provider like Cloudflare that does, as described in our custom domains docs.

CNAME with @ is not possible, how can we deal with that ?

Your www.kanzlei-kainz.at is a subdomain, not an apex, so you can set a standard CNAME record for it (www -> ok2d3le8.up.railway.app) right now at your current DNS provider. For the apex kanzlei-kainz.at, your provider must support CNAME flattening or ALIAS records - if domaintechnik.at does not, the recommended workaround is to point your domain's nameservers to Cloudflare (free plan works), which handles CNAME flattening automatically so you can set a CNAME on @ pointing to 4oglz3cf.up.railway.app.
