postgres is used for storing data. I can't really imagine you not needing it. Redis is a cache type system. Hence why you don't need Redis specifically.
It looks like self hosting still gives you access to put in templates from integrations page. So railway won't have an OpenAI setup out of the box. But it looks easy to just select the https://n8n.io/integrations/?q=openai you want

What data would I be storing?
Do I need to make the account or is it already made?
I am guessing the template I install has to have the integrations or etc setup in order to do that?

The other did not - which would mean I can't use webhooks correct? Like when I try to use it it will say "local" instead of something else?
A template with webhook processor - means the webhook step has already been setup.

these questions would more pertain to n8n than railway, perhaps your questions would be better for them?
