User-accessible backups would be limited to the Pro plan, and even so, they would need to be enabled beforehand.

Unfortunately, we do not have any visibility into what kinds of commands users run on their databases; that kind of monitoring would be up to the individual users to set up.
It doesn't make sense, it was normal yesterday and I didn't touch the system today.

Perhaps a force migration command was run or something of that nature.
very weird, the tables are still here, but the data is empty (I didn't touch the database)

That is indicative of a forced migration.
I didn't understand, last time it had been literally removed, I did the rollback and went back, but this time it wasn't even removed and I couldn't recover it

Rollbacks do not restore data, so unfortunately, that feature would not help you here.
