I took a look at the template, It does include SMTP variables.

I tried but couldn't get SMTP to work. I need to make it work so the viewer can be invited.

It's likely a misconfiguration, SMTP can be tricky sometimes, SSL Vs. TLS, port 465 Vs. 587, Gmail doesn't work, etc.
Play around with the SMTP variables and you'll get it.

I feel sorry but I can't make it work.
I simply clicked the deploy button but the Plausible-analytics-CE never passes the health check step. Any ideas?

Hey! I can try and give you a hand for sure. Are any of the services throwing errors?
I just spun up a new project using my plausible template and it deployed perfectly so it may be something specific to your configuration of the template. Were there any changes you made to the variables?

It's likely that it's OOM crash looping for them given they are on the trial plan.
